200g soft goat's cheese
150g hard goat's cheese, finely grated
4 tbsp extra virgin olive oil
1 tbsp brandy 
2 tsp thyme leaves

1. In a mixing bowl break up the soft goat’s cheese into a fine crumble then add in the grated hard cheese, brandy, half of the olive oil and the thyme. 

2. Using a fork mash all of the ingredients together and season with salt and pepper to taste.

3. Pack the mixture into a suitable air-tight jar or container then pour remaining olive oil on top and seal.

4. Refrigerate for 2-3 weeks, before serving at room temperature.
