200ml extra virgin olive oil
2 large eggs
300g plain flour
150g caster sugar
100g brown sugar
1 tbsp whole milk
1 tsp bicarbonate of soda
½ tsp sea salt
1 vanilla pod
1 lemon zest

In a large bowl, whisk together the extra virgin olive oil, caster sugar, brown sugar, eggs, milk, vanilla pod extract and the lemon zest. 

Sift in the flour, then add the salt and bicarbonate of soda and mix until a dough forms. Cover the dough and let rest in a warm area for 24 hours. 

Once the dough has rested, preheat the oven to 170C (340F) then roll the dough into small balls, flatten slightly then bake in the oven for 10 minutes, until golden brown.
