Olive Oil Flatbread

Ingredients:
500g plain flour
150ml olive oil, evoo
250ml still water
2 sprigs of rosemary
2 tbsp fresh rosemary, chopped 
1 ½ tsp bicarbonate of soda
1 tsp sea salt
Extra virgin olive oil for brushing
 

Directions:
Preheat the oven to 220C (450F). 

 In a large mixing bowl, combine the flour, salt, chopped rosemary and bicarbonate of soda, then gradually stir in the water and the oil until a dough has formed. 

Roughly knead the dough on a floured worktop for 2-3 minutes, then divide into 5 sections. 

Roll each section of dough out thinly on to a sheet of baking paper, then lightly brush with extra virgin olive oil and sprinkle the rosemary sprigs and some additional sea salt on top.  

Bake in the oven for 10-12 minutes, or until golden and crispy. Allow the flatbreads to cool for a few minutes before serving, or store for up to 2 days.  

Chili Garlic Linguini with Extra Virgin Olive Oil

Ingredients:
500g linguini 
220ml extra virgin olive oil
3 garlic cloves, finely chopped
1 tsp sea salt 
2 red chillies, finely chopped
A large handful of fresh basil, roughly torn

Directions:
Heat the extra virgin olive oil in a heavy bottomed pan or skillet then add the garlic and sauté for 2 minutes.

Into the pan, add the chillies, salt and basil and cook for a further 2-3 minutes, stirring occasionally.  

While the sauce is cooking, prepare the linguini al dente in a pot of salted water as per the cooking instructions on the packet. 

 To serve, drain the linguini and combine with the extra virgin olive oil sauce. 

Potato Salad with Green Beans and Olive Oil

Ingredients:
10 small-medium potatoes, peeled
200ml extra virgin olive oil
200g green beans, washed
3 tbsp aged balsamic vinegar
½ tsp sea salt 
¼ tsp black pepper
Basil (for garnish)
 

Directions:
Chop the potatoes into halves or quarters, depending on size, and boil in a pot of salted water for 20 minutes, or until cooked through.  

Remove the ends from the green beans and boil or steam for 3-5 minutes or until tender. Mix the onion, potatoes and pepper, season with the salt, pepper and vinegar.

Into a bowl, add the extra virgin olive oil, balsamic vinegar, salt and pepper and whisk together with a fork until well combined. 

Allow the potatoes and green beans to cool for a few minutes before adding to the olive oil mixture and stirring. This dish can be served chilled or still slightly warm. Sprinkle some fine-cut basil before serving (optional).

Spicy Bulgur Salad

Serving Size: 4-6
Prep time: 25 minutes


Ingredients:
2 cups coarse bulgur wheat
2 cups hot water
15ml/1 tablespoon tomato paste
15ml/1 tablespoon red pepper paste (optional)
1 teaspoon paprika flakes
Juice of 1 lemon
2 tablespoon concentrated sour pomegranate sauce
45ml/3 tablespoons extra virgin olive oil
1 medium onion, finely chopped
4 green onions, finely chopped
4 tomatoes, finely chopped
Handful of finely chopped Italian parsley
1 teaspoon salt
Freshly ground black pepper
Lettuce leaves to serve
 

Directions:
Mix the bulgur wheat, salt, ground black pepper, red pepper flakes, tomato paste, red pepper paste and the chopped onion and knead thoroughly – this will help all the flavors marry and the onion to soften-. Pour the hot water over this mixture and stir, then leave to stand for about 15 minutes. It should absorb all the water by the end of this period. The bulgur should be of a dry consistency.

Add the lemon juice and the pomegranate syrup together with the extra virgin olive oil and knead well again. Stir in the remaining ingredients and combine thoroughly.

Serve as a salad in a bowl garnished with lettuce leaves. Alternatively, take spoonfuls of the mixture and with wet hands roll into balls the size of walnuts. Refrigerate until required.

Note: Bulgur wheat unlike cracked wheat, is a grain made from the cooked wheat berries which have the bran removed, and are then dried and pounded. There are two varieties generally available, fine and coarse. If you can get the fine bulgur wheat, use 1/2 cup water for 1 cup fine bulgur wheat.

Olive Oil Biscuits

Serving: 4-6
Prep Time: 15 mins (rest overnight)

Ingredients:
200ml extra virgin olive oil
2 large eggs
300g plain flour
150g caster sugar
100g brown sugar
1 tbsp whole milk
1 tsp bicarbonate of soda
½ tsp sea salt
1 vanilla pod
1 lemon zest

Directions:
In a large bowl, whisk together the extra virgin olive oil, caster sugar, brown sugar, eggs, milk, vanilla pod extract and the lemon zest. 

Sift in the flour, then add the salt and bicarbonate of soda and mix until a dough forms. Cover the dough and let rest in a warm area for 24 hours. 

Once the dough has rested, preheat the oven to 170C (340F) then roll the dough into small balls, flatten slightly then bake in the oven for 10 minutes, until golden brown.

Foudjou (Potted Cheese)

Ingredients:
200g soft goat's cheese
150g hard goat's cheese, finely grated
4 tbsp extra virgin olive oil
1 tbsp brandy 
2 tsp thyme leaves
 

Directions:
1. In a mixing bowl break up the soft goat’s cheese into a fine crumble then add in the grated hard cheese, brandy, half of the olive oil and the thyme. 

2. Using a fork mash all of the ingredients together and season with salt and pepper to taste.

3. Pack the mixture into a suitable air-tight jar or container then pour remaining olive oil on top and seal.

4. Refrigerate for 2-3 weeks, before serving at room temperature.

Chocolate Olive Oil Cake

 

Ingredients
2/3 cup olive oil, plus more for greasing
6 tablespoons good-quality unsweetened cocoa powder, sifted
1/2 cup boiling water
2 teaspoons best vanilla extract
1 1/2 cups almond meal (flour) or 3/4 cup plus 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
pinch salt
1 cup superfine sugar
3 eggs
1 X 9-inch springform
cake pan


Directions
Preheat your oven to 325 degrees F. Grease your springform pan with a little oil and line the base with parchment paper.

Measure and sift the cocoa powder into a bowl or pitcher and whisk in the boiling water until you have a smooth, chocolatey, still runny (but only just) paste. Whisk in the vanilla extract, then set aside to cool a little.

In another smallish bowl, combine the almond meal (or all-purpose flour) with the baking soda and pinch of salt.

Put the sugar, olive oil, and eggs into the bowl of a freestanding mixer with the paddle attachment (or other bowl and whisk arrangement of your choice) and beat together vigorously for about 3 minutes, until you have a pale-primrose, aerated, and thickened cream.

Turn the speed down a little and pour in the cocoa mixture, beating as you go, and when all is scraped in, you can slowly tip in the almond meal (or all-purpose flour) mixture.

Scrape down, and stir a little with a spatula, then pour this dark, liquid batter into the prepared pan. Bake for 40-45 minutes or until the sides are set and the very center, on top, still looks slightly damp. A cake tester should come up mainly clean but with a few sticky chocolate crumbs clinging to it.

Let it cool for 10 minutes on a wire rack, still in its pan, and then ease the sides of the cake with a small metal spatula and spring it out of the pan. Leave to cool completely or eat while still warm with some ice cream, as a dessert.

Roasted Garlic & Herb Olive Oil Seasoning

Here is what you can do with this magical seasoning: 

For dipping:
Mix package contents with 1 tbsp of water in a small bowl. 
Set aside for 5 minutes to soften.
Add 1/3 cup of olive oil and mix. 
Wait for 5-10 minutes to serve. 

Suggestions
Serve with crusty bread or over your pasta/salad. This combination makes a great dressing!
Or be creative and use it as garlic bread topping.
